Strawberry Cobbler | The Raw Recipe

This easy strawberry cobbler is filled with fresh strawberries and topped with a sweet vanilla cake. It’s crispy on the outside and soft and creamy on the inside. Top with a little vanilla ice cream for the ultimate treat!

What is a cobbler?
A cobbler is a dessert that contains fresh fruit and a cookie-like filling. Since you’re dropping the cookie dough onto the fruit, it gives a cobblestone look when it’s done baking. I like to use a ¼ measuring cup and just pour the batter over the fruit. Strawberries are my favorite fruit of all time. So this Strawberry Cobbler is one of my favorite things to make every year!
This Strawberry Cobbler also comes together quickly and easily. Strawberries are tossed with lemon juice, cornstarch and a little sugar, which creates this wonderful strawberry sauce at the bottom of the dish. And the cookie filling is my all time favorite. It’s more of a cake than a cookie. It’s so soft and buttery on the inside, but it still has that crispy, cookie-like crust on the outside.

Strawberry filling
- Strawberries: I use fresh strawberries to get a brighter taste.
- Sugar: This sweetens the strawberries.
- Cornstarch: This will thicken the filling.
- Lemon juice: You can use fresh lemon juice or bottled lemon juice. The one you prefer.
Trim
- Sugar: I love the sweet flavor that the sugar adds to the filling.
- Plain flour: I used all-purpose flour for this recipe.
- Salt: This enhances all the flavors of the filling.
- Baking powder: This makes the cobbler light and soft.
- Vanilla extract: A touch of vanilla adds a nice flavor.
- Milk: I used 1% milk, but you can use whatever you have on hand.
- Butter: I used unsalted butter in this recipe.
How to make strawberry cobbler
Cobblers can be made with so many different fruits, but this Strawberry Cobbler is definitely one of my favorites. This is a great recipe for late summer before fall. Then you can start making peach and apple tarts!
- Preparation: Preheat the oven to 375 degrees Fahrenheit.
- Prepare the strawberry mixture: Add the diced strawberries to a two-quart ceramic baking dish or deep pie dish. Then add the sugar, cornstarch and lemon juice. Stir to evenly coat the strawberries with the mixture. Let stand while you prepare the cake filling.
- Combine: In a large bowl, add sugar, flour, salt and baking powder. Stir to combine.
- To pay: Pour in the milk, vanilla extract and melted butter.
- Spoon dough: Pour the batter on top of the strawberries.
- Bake: Bake at 375 degrees Fahrenheit for 35 minutes until top is crispy and golden.
- Garnish and serve: Serve the cobbler lukewarm or at room temperature. Top with a scoop of vanilla ice cream or whipped cream for a special treat!

Can I use frozen strawberries?
Absolutely! Just put the strawberries in the fridge overnight to let them thaw before using them for this Strawberry Cobbler. If you have a ton of fresh berries on hand now, you can always freeze them and use them later to make this delicious recipe! Then you can cook it all year round.

How to Store Strawberry Cobbler
This dessert makes delicious leftovers! You can eat it hot or cold and enjoy it a few days later. That’s if you can make it last that long!
- In the refrigerator: Let the cobbler cool, then place it in an airtight container. Store it in your refrigerator and it will last about 4-5 days.
- To reheat: When you’re ready to eat it, you can eat it cold, or you can cover it with foil and then reheat it in the oven at 325 degrees for about 10 to 20 minutes, or until nice. hot !

Ingredients
Strawberry filling
- 1 kg strawberries diced
- 1/2 Chopped off sugar
- 1 teaspoon cornstarch
- 1 teaspoon lemon juice
Trim
- 1/2 Chopped off sugar
- 1 Chopped off all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 3/4 Chopped off Milk
- 4 soup spoons Butter molten
Instructions
Preheat the oven to 375 degrees Fahrenheit.
Add the diced strawberries to a two-quart ceramic baking dish or deep pie dish. Then add the sugar, cornstarch and lemon juice. Stir to evenly coat the strawberries with the mixture. Let stand while you prepare the cake filling.
In a medium sized mixing bowl, add the sugar, flour, salt and baking powder. Stir to combine.
Pour in the milk, vanilla extract and melted butter.
Pour the batter on top of the strawberries.
Bake at 375 degrees Fahrenheit for 35 minutes until the top is crispy and golden.
Serve the cobbler hot or at room temperature. Top with ice cream for a special treat!
