Snickerdoodle Cobbler | The Raw Recipe

The Cobbler Snickerdoodle is filled with cinnamon and creates its own caramel sauce while baking! It’s soft, sweet and so delicious. It’s the perfect fall dessert that all your guests will be dying to try!
Who doesn’t love snickerdoodles? I love anything even resembling the flavor and make just about every recipe I can to involve that delicious cinnamon flavor! This dessert is so easy to make and a bit magical. Not to mention it’s perfect for fall baking! It’s basically a cinnamon cake, but we’re going to layer things with melted butter, the cake batter, and then pour hot water over it. I know it sounds crazy, but trust me! You’ll end up with a moist cinnamon cake that hides an indulgent caramel sauce underneath!
Magic, no? This cake didn’t last long at my house! The best is that caramel sauce that hides underneath. Be sure to pour a spoonful and drizzle over the cake. And of course ice cream too. Because, of course, as with any cobbler, it’s not complete until you’ve covered it with vanilla ice cream. Combining the hot gooey snickerdoodle cobbler with cold ice cream is definitely something you need to experience this fall season!
Snickerdoodle Cobbler Ingredients
These ingredients are so simple that you probably already have them in your kitchen! Especially if you are a snickerdoodle lover like me! See the recipe card at the bottom of the article for exact measurements.
- Plain flour: I used all purpose flour in this recipe.
- baking powder: It helps to make the cobbler golden and soft.
- Salt: This improves all the ingredients of the recipe.
- Ground cinnamon: It’s the perfect ingredient for a fall treat!
- light brown sugar: This adds a deep, sweet flavor that complements the other ingredients.
- Whole milk:I used whole milk but you can use any milk you have on hand.
- Butter: I used unsalted butter in this cobbler snickerdoodle.
- Vanilla extract: Add a touch of vanilla to the overall flavor.

- Light brown sugar: This creates a delicious cruble for the top.
- Salt: The salt will bring out all the flavors.
- Ground cinnamon : The cinnamon in the filling complements the cinnamon in the cobbler!
- Hot water: This helps the filling and cobbler cook together nicely and evenly.
Instructions for Making a Snickerdoodle Cobbler
This cobbler only takes a few minutes to prepare and the rest of the time is spent cooking! It’s the perfect fall treat for any occasion, including the holidays! Garnish it with a delicious vanilla ice cream and your guests will go crazy for it!
- Preparation: Preheat the oven to 350 degrees. Grease an 8×8 baking dish and set aside.
- Mix the dry ingredients: In a medium bowl, add flour, baking powder, salt, ground cinnamon, light brown sugar. Stir with a fork or whisk to combine.
- Add the wet ingredients: Pour in the milk, butter and vanilla extract. Stir to combine.
- Add to the pot: Pour the batter into the prepared baking dish.
- Make the filling: In a small bowl, combine the ingredients for the filling: light brown sugar, salt and ground cinnamon. Mix with fork until blended. Sprinkle the sugar mixture on top of the cake batter.
- Add water: Pour hot water over the entire cake, be sure to cover the entire cake evenly.
- Bake: Bake for 40-45 minutes. Leave to cool for about 5 minutes. Serve hot with ice and enjoy!

Variants
If you want to switch things up with this cobbler snickerdoodle, you absolutely can! I do it so often that sometimes it’s good to change it up a bit. Here are some ideas for you!
- Add nuts: After it comes out of the oven, I sometimes like to sprinkle in a few nuts just to give it some texture or crunch. try pecans, walnuts or sliced almonds!
- Serve it with ice cream: Nothing elevates a dessert more than adding ice cream. Serve it on top, right out of the oven, and it will melt perfectly on the cobbler snickerdoodle.
- Fruit: Slice a few apples and add them to the batter before baking. Apples and cinnamon are a heavenly pairing and it really makes this dessert unique and delicious!

How to Store Snickerdoodle Cobbler Leftovers
This cobbler tastes so delicious, even a day or two later! Here are some instructions on how you can store it to keep it fresh.
- In the refrigerator: Once your cobbler has cooled, you can store it in an airtight container. Put it in your fridge and it will last about 3 days.
- To reheat: Reheat it in the microwave on high power for about 1-2 minutes or until heated through. Add a scoop of vanilla ice cream and it will be as good as the day you made it!

- 1 Chopped off all purpose flour
- 1 1/2 coffee spoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 3/4 Chopped off light brown sugar
- 1/2 Chopped off whole milk
- 2 soup spoons Butter without salt molten
- 1 teaspoon vanilla extract
