These might very well be the best cookie bars I’ve ever made. They are thick, dense and slightly crispy around the edges. It’s a perfect cross between a cookie and a dessert bar. Topped with a decadent cream cheese frosting, these will be your new favorites. They’re everything you love about red velvet cake, but in a moist, gooey dessert bar form. Psst- they are also a great option for Valentine’s Day!

  1. Preheat the oven, preparation pan: Preheat the oven to 350 degrees. Prepare a 9×13 inch pan. I like to line mine with foil or parchment paper and spray it with cooking spray so the bars lift easily and are easy to cut.
  2. Mix the dry ingredients: In a medium bowl, combine flour, cocoa, salt and baking powder. Then set aside.
  3. Mix the wet ingredients: In a mixing bowl, cream 1 cup softened butter and sugar until light and creamy. About 2-3 minutes. Beat eggs, vanilla and food coloring until combined.
  4. Mix and cook: Add the flour mixture until a soft dough forms. Press into bottom of 9 × 13 inch pan. Bake for about 20 minutes until the edges start to pull away from the sides and a toothpick inserted in the center comes out clean. Let cool completely before frosting.
  5. Prepare the icing and enjoy: To make the cream cheese frosting, beat together the cream cheese and butter. Add powdered sugar and vanilla. Beat together until smooth. Frost the tops of the bars and enjoy!

When you are ready to eat them, sinvolves taking the bars out of the fridge a few minutes before serving to bring them to room temperature. This way, they will be very soft and will taste the same as on the first day!
