These hot chocolate cookies are the perfect treat for the winter season! These soft and delicious cookies have a marshmallow on top and ooey, gooey chocolate in the middle. You won’t be able to stop at just one!

Cookies, especially holiday cookies, are some of the best things we make all season long. There are SO many different varieties to choose from, but long-time favorites in our house are these Grinch Cookies, these delicious Christmas Tree Sugar Cookies or, my favourite… Italian Christmas Cookies!

What are hot chocolate cookies?

These little hot chocolate cookies are packed with chocolate and cocoa. These cookies are topped with a gooey marshmallow and baked to perfection. Just when you think they’re almost perfect, you hit the melted chocolate in the center of the cookie. It truly represents a cup of hot chocolate perfectly! Needless to say… It was an instant family hit with us!

Not only are these cookies incredibly delicious, but they’re also simple! you probably already have all the ingredients at home, and trust me… once you start making them, you will always have the ingredients to make hot chocolate cookies at home because they are TOO good! Ingredients for the Best Hot Chocolate Cookies

These easy hot chocolate cookies are deliciously sweet and so much fun to make! You will be very familiar with the ingredients and will have most of them on hand. Marshmallows and melted chocolate take these cookies to the next level! See the recipe card at the bottom of the article for exact measurements.

  • Butter without salt: The butter helps melt the chocolate.
  • Semi-sweet chocolate bars: Semi-sweet chocolate is the best of these cookies. Chocolate chips can also be used.
  • Flour: I used all purpose flour in this recipe.
  • Cocoa powder without sugar: Adds richness and more delicious chocolate flavor.
  • Baking powder: This helps your cookies rise (no one wants flat cookies)!
  • Salt: The salt balances the sweetness of the cookie and also enhances all the flavors of the other ingredients.
  • light brown sugarA: Brown sugar adds richness to these cookies.
  • Eggs: Room temperature eggs are best.
  • Vanilla extract: Vanilla is a staple in cookies and enhances the flavors of chocolate.
  • Marshmallows: Cut the marshmallows in half… They will become very soft in the oven.

How to make hot chocolate cookies

Grab your kids and bake these fun hot chocolate cookies for the holidays or any time of the year! This recipe is easy to follow and comes together quickly. Follow my simple instructions below on how to make hot chocolate cookies.

  1. Melt butter and chocolate : In a medium saucepan, melt butter and chopped chocolate over medium-low heat, stirring frequently. Once melted, remove the pan from the heat and allow it to cool for 15 minutes.
  2. Mix the dry ingredients: In a medium bowl, whisk together flour, cocoa powder, salt and baking powder. Put aside.
  3. Mix the wet ingredients: In a large mixing bowl, beat the eggs, brown sugar and vanilla until smooth using an electric hand mixer.
  4. Add the melted chocolate to the wet mixture: Add cooled melted chocolate and stir to combine.
  5. Add the dry ingredients: Add the dry flour ingredients in two batches to the batter. The batter will be almost the consistency of thick cake batter.
  6. Cover and refrigerate: Cover with plastic wrap and let the dough rest in the refrigerator for at least 1 hour.

Bake

  1. Form balls: Once the dough has cooled, you can line the baking sheets with parchment paper. Roll the dough into 1 inch balls and place them 2 inches apart on the parchment paper. Slightly flatten the tops.
  2. Bake: Bake at 325 degrees Fahrenheit for about 12 minutes or until edges of cookies begin to crack.
  3. Cut marshmallows and chocolate: While they cook, cut the marshmallows in half. Stick a square of chocolate on each cut side of the marshmallows. It will be on the sticky side, so the piece of chocolate will stay in place.
  4. Place marshmallows and chocolate on hot cookies: Remove the hot chocolate cookies from the oven. Still on the baking sheet, stick a marshmallow with the chocolate piece down on each cookie. Then return the cookies to the oven for about four more minutes until the marshmallows are soft.
  5. Chill and Enjoy: Remove from oven and transfer to cooling racks to cool. Grate extra chocolate on top for topping if desired!

Variants

When I find something I like (and I love these hot chocolate cookies), so I always want to find different ways to change it so I can do it all the time! Here are some ideas for keeping this recipe unique every time.

  • Toppings: I love to drizzle with white chocolate sauce, delicious caramel sauce, or chocolate sauce. You can also top it with festive sprinkles or grated chocolate to make them perfect for the holiday season!
  • Blends: If you want these hot chocolate cookies extra rich, add mini white chocolate chips, mini marshmallows or caramel pieces to the batter. You will taste them with every bite!

How to store remaining cookies
