Crispy breaded chicken, angel hair pasta and an incredible lemon garlic butter sauce combine to create these jaw-dropping chicken scampi. It’s light, tasty and ready in less than 30 minutes!

If you’re a fan of classic prawn scampi, you’ll LOVE this chicken version! It has all the garlic butter goodness you crave! If you’re looking for quicker and easier dinners that are bursting with lemon and garlic flavor, you also have to try this salmon piccata and chicken piccata.

Easy pan-fried chicken scampi recipe

Chicken scampis, also called chicken cutlets or chicken cutlets, are thin, breaded and pan-fried pieces of meat. They are usually served with a garlic butter sauce. (The succulent sauce is what makes chicken scampi so amazing!!) Scampi is most often made with veal or shrimp, but it can be made from any type of poultry. Personally, I love doing it with chicken because I always have some on hand in my freezer!

Chicken prawns are delicious and so impressive, but take less than 30 minutes to prepare! It’s one of my favorite mid-week dinners because of how incredibly easy it is. Not to mention that my family is going absolutely nuts! Gourmets and picky eaters in your household will be delighted. There’s nothing better than the combination of crispy seared chicken, fresh vegetables and a bed of pasta all glazed in garlic butter!

Chicken Scampi Ingredients

Don’t let the long list of ingredients fool you, these are all pantry staples! You can find the measurements for each ingredient in the recipe card below.

  • Angel Hair Pasta: Angel hair goes perfectly with oil and butter based sauces. You can also swap it for spaghetti or fettuccine noodles.
  • Olive oil: This is used to sauté your vegetables! I love the earthy flavor that olive oil adds, but you can definitely swap it out for your favorite cooking oil.
  • Pepper: I used red and yellow bell peppers because of their sweet flavor! I also love the pop of color they add to the dish.
  • Red onion: Chopped red onion adds a kick of tangy, savory flavor and extra texture to langoustines.
  • Boneless chicken fillets: For easy preparation, I like to buy boneless chicken tenders because they are already the right size for cooking.
  • Italian seasoning: This blend of herbs and seasonings adds the BEST flavor to chicken. You can buy this prefab or make your own custom mix using my recipe here!
  • Salt and pepper: Add to taste, enhances the flavor of the whole dish.
  • Plain flour: All purpose flour is used to coat chicken breasts. It creates a light and crispy outer layer when cooked!
  • Butter: Used to cook chicken. It also adds richness and flavor!
  • Chopped garlic: Garlic is the key to this tasty sauce! It packs every bite of chicken, pasta, and veggies with incredible savory flavor.
  • Dry white wine: A touch of white wine such as Chardonnay or Sauvignon Blanc enhances the overall flavor of the chicken scampi.
  • Lemon juice: There really is nothing better than the combination of lemon and garlic. Add a squeeze of lemon juice for a hint of tangy flavor!
  • Parsley: I love garnishing my dishes with fresh herbs. Parsley not only looks great as a garnish, but also adds extra flavor and aroma!
  • Grated parmesan: Who doesn’t like a little grated parmesan cheese on top? It really brings the dish together and adds a hint of cheesy flavor.

How to make chicken scampi

Chicken prawns are one of my favorite meals to make for my family because not only do they taste amazing, they come together in less than 30 minutes from start to finish! It’s more than easy to make, but the taste comes from your favorite Italian restaurant.

  1. Cook the pasta: In a large saucepan, bring the water to a boil. Add the pasta and cook al dente. Drain and reserve.
  2. Sautéed vegetables : In a medium skillet, add 1 tablespoon of olive oil, peppers and red onion. Sauté for 3-4 minutes or until tender. Remove and set aside on a plate.
  3. Cook the chicken: Add a tablespoon of butter to the skillet. Dredge your chicken in flour then season with Italian seasoning, salt and pepper. Add the fillets to the skillet and cook until browned on each side for 5 to 7 minutes. Remove and set aside on a plate.
  4. Add the sauce ingredients: Add the remaining butter and garlic. Cook the garlic for about 1 minute then stir in the white wine. Let simmer and reduce. Add fresh lemon juice and parsley.
  5. Mix and serve: Add the pasta, peppers and chicken to the sauce. Toss until coated and serve with grated parmesan.

Tips and variations

Here are some ways to customize your chicken scampi! I’ve also included some tasty sides to complete your meal. Between the crispy, golden chicken and the buttery sauce, it quickly became a family favorite. I’m sure you and yours will love it just as much!

  • Use chicken breasts: You can definitely use chicken breasts instead of chicken tenders! I like to freeze chicken breasts in bulk, so this is a great way to use this broth. If frozen, thaw overnight before use. Simply cut them in half before coating them with flour and seasonings and they’re ready to go!
  • Spice: If you want to turn up the heat, try adding red pepper flakes to your garlic butter scampi sauce for a little kick!
  • Serve with: I always like to serve my chicken prawns with rolls or breadsticks. My kids love dipping their bread in the garlic sauce! To round out your meal, you can also serve this dish with salads like this Italian Chopped Salad or this Olive Garden-inspired Salad.

Storing leftovers

Do not throw away your leftover langoustines with chicken, it makes the BEST lunches of the week!

  • In the refrigerator: Store the chicken prawns in an airtight container for 2 to 3 days.
  • Reheating: I like to reheat my scampi on the stove over medium heat until piping hot. You can also put it in the microwave in 30 second intervals.
